When a Brazilian and a Malaysian friend met in Europe, they realized their cuisines spoke a similar language. Though their homelands are oceans apart, both cultures share deep roots in ingredients that often remain unseen on European tables. From the earthy comfort of cassava—known as mandioca in Brazil and ubi kayu in Malaysia—to fragrant herbs and tropical spices, these flavors tell stories of resilience, memory, and belonging.

 

Roots was born from that discovery. Together, we created a 5-course menu that explores these shared ingredients in new forms. Cassava takes center stage, presented in different shapes and textures—crispy, creamy, roasted, and transformed—celebrating its versatility and cultural significance.

 

As the nights grow colder in Utrecht, Roots brings the tropics to the heart of winter, transforming the historic former prison at Wolvenplein into a space of warmth, flavor, and connection. This pop-up dinner isn’t just about food—it’s about rediscovering what ties us together.
