This is all time Malaysian favorite. Nasi lemak is something we will eat for breakfast, lunch, dinner and even at 4 am after a night out before heading home. The rice is cooked with coconut milk. Sambal prawns or squid is a very common addition to this national Malaysian dish. Layers of flavors such as sweet from the coconut palm sugar, sourness from the tamarind juice, bitterness from the trasi (fermented shrimp paste) and of course the main spice will be the chilies. Some like it hot and some like it mild but I love mine hot. Besides layers of flavors, textures are important. Fried anchovies and peanuts for the crunch, fresh cucumber and pineapple to freshen up the palette and blow off the heat.
